By optimizing mature cow size without sacrificing carcass endpoints, cow-calf producers can significantly improve their herd’s resource efficiency and bottom-line profitability.

In a recent Cow-Calf Corner newsletter, Mark Johnson, Oklahoma State University Extension beef cattle breeding specialist, shares real-world benchmarking data from his own herd. This case study details how two home-raised steers achieved impressive carcass weights from moderately sized dams, illustrating the balance between cow efficiency and terminal performance.

He explains, “Today, I received the hot carcass weights on both calves, a solid black calf at 935 and a black-nosed smoke at 951 lb. I looked at my calving book from the spring of 2025 and reviewed mature cow weight records taken at pregnancy check in the fall of 2024. The results are interesting.”

The Management and Feeding Protocol

According to Johnson, both calves were born in the last week of March 2025. Their production timeline highlights a practical, high-growth management track:

  • Pre-Weaning Health: Calves received two rounds of vaccinations before weaning. During the second round, they were castrated, dewormed and given a Zeranol growth implant.
  • Weaning and Backgrounding: Weaned in early August 2025, the calves spent several months grazing Bermuda grass overseeded with sorghum-sudangrass.
  • Feeding Phase: In February 2026, they transitioned to a 14% crude protein growing ration fed “as is” at 15 to 20 lb./day. By mid-March, they transitioned to a finishing ration consisting of two parts of the growing ration to one part cracked corn.
  • Finishing Intake: Over their final 120 days on feed, the calves were fed ad libitum, averaging an “as-is” daily intake of 35 lb.
  • Harvest: The steers were harvested on July 21, 2026, at just less than 16 months of age.

The Genetic Foundation: High-Performance Sire EPDs

To achieve heavy carcass weights within a short feeding window, terminal genetics play a vital role. Both calves were sired by a high-performing Angus bull featuring a powerful genetic profile:

  • Weaning Weight EPD: Top 20% of the breed
  • Yearling Weight EPD: Top 15% of the breed
  • Residual Average Daily Gain (RADG) EPD: Top 3% of the breed
  • Dry Matter Intake (DMI) EPD: Top 40% of current Angus sires

Cow Efficiency: Achieving More with Less

High-performing carcass weights do not require oversized, high-maintenance cows. The dams of these steers are prime examples of longevity, reproductive efficiency, and moderate mature frame sizes:

  • Dam of the Black Calf: Commercial black cow, 8 years old, weighing 1,180 lb.
  • Dam of the Smoke Calf: Commercial black-nosed smoke cow, 8 years old, weighing 1,280 lb.

Purchased as bred cows in March 2022, both cows are of unknown genetic backgrounds but have proven to be highly efficient. According to Johnson, both cows “have bred back promptly and calved on time each year since.”

While the carcass weights — 935 lb. and 951 lb. — landed slightly below the national steer carcass average of 963 lb., the steers reached these weights in just 170 days on feed — significantly faster than the current industry average.

The most compelling takeaway for cow-calf producers lies in the ratio of calf carcass weight to the mature weight of the dam. Moderate-sized cows (less than 1,300 lb.) reduce an operation’s maintenance feed costs while still yielding heavy, fast-growing calves when paired with high-growth, feed-efficient terminal sires.

“Neither of the cows (1,180 and 1,280 lb.) would be considered very large,” he concludes.
