Speed Skater Serving as 2014 Olympic Beef Ambassador of Missouri

The Missouri Beef Industry Council is excited to announce that Olympic bound speed skater, Emily Scott, is the 2014 Olympic Beef Ambassador of Missouri. Emily will be competing in the Sochi Olympic Games starting February 10th for short track speed skating.

Emily was chosen as this year’s first ever Beef Ambassador for the Missouri Beef Industry Council because of her strong advocacy as using beef as her main source of protein and the importance it plays in her everyday training regimen. Emily trains 8 hours a day and 6 days a week in an intensive schedule of both on ice and off ice workouts.

"As an athlete, iron is vital to my diet I eat beef because it is the best source of iron and protein. Iron boosts your energy because it is needed to make red blood cells which carry oxygen to your lungs and other areas" says Emily Scott. "Iron is especially important for female athletes. Because of our intense training regimen that we undergo, females are at a high risk for anemia and red meat, such as beef, is essential for helping protect females against it. However, I also eat beef because it is a complete protein and protein aids in athlete recovery and building muscle."

Beef is not a new form of protein for Emily by any means and neither is hard work. Emily grew up in Springfield, Missouri and started skating at the age of three. Between school, skating practices, and traveling back and forth every weekend to Everton, Missouri to work on her father and grandfather’s 80 acre farm, she learned at a very young age that in order to get where you wanted to be in life, you have to work very hard. Emily has fond memories of her family farm where they raised Angus and Limousin cattle breeds. One of her favorite memories of being on the farm is feeding the cattle and riding around on the tractor with her father.

The Missouri Beef Industry Council is honored to have Emily Scott as the 2014 Olympic Beef Ambassador of Missouri to which she can be the voice of beef and demonstrate that it is an essential protein for not only athletes, but for all consumers.
